| The study of menus fall into four main fields: cruisine and gastronomy, design and presentation, price record, and association. Some specimens reflect aspects of all four fields. Others, more commonly, just one or two. The most marked of changes in the last hundred years has been the reduction in the numbers of courses and quantities consumed. In the 1860s ten or eleven courses were considered normal. In the early 1920s a complete dinner consisted of eight courses. How times have changed!
